Kevin O’Keeffe built CloverHill Honey & Oinkies through tough times and a lot of learning from the various industries – which now forms a vital part of his vision. He has gained a vast range of management skills and how to apply all his knowledge and skills as effectively as possible.

Kevin has had his hand on the pulse and made extensive use of the knowledge and experience he gained as a student, chef, and recycler. As a student, the journey may not always follow a traditional route. Kevin started with a degree in culinary arts to working at a waste centre and now beekeeping – the learning never stops.

As an experienced chef, Kevin knows that employees can be taken advantage of and emphasizes that his staff follow their dreams. Oinkies operates within a lifecycle, allowing for 25 jobs for the various departments, and without it, CloverHill Honey & Oinkies would not function properly.

Through recycling, he learned how to save and learned what it means to give back that which you take to sustain the environment. Kevin’s love for the environment now leads him to learn about beekeeping.

Many people, myself included, often think that getting into beekeeping is as easy as buying a hive and some bees, and letting them get on with it to produce honey without much effort. But the reality is far from that.

Bees need proper care and attention. They must be inspected regularly to check for diseases and to monitor the health of the colony. A strong hive depends on a well-mated queen who can lay up to 2,500 eggs a day during the height of summer. Without her, or if the hive is struggling, things can quickly go wrong.

Beekeeping is a hands-on job, and there’s a lot of science behind it that you’ll need to learn. For those who are curious but not ready to dive straight into the deep end, Adopt a Hive offers a fantastic alternative. It’s perfect for individuals, families, or even businesses who want to support and learn about our native Irish bees.

Through the Adopt a Hive programme, you can “own” a hive in your name for a full year without the hassle of investing in all the equipment. You’ll have the chance to visit the hive once or twice during the season and get a real sense of what’s involved in keeping bees. This way, you can make an informed decision about whether beekeeping is for you—or if it’s best left to the professionals.

Kevin O’Keeffe reached out to one of the brothers and cofounders, Andrew from Blackwater Honey to gain more knowledge and training about bee farming. Sharing the passion of honey bees, Andrew provided the training and assisted with building the Oinkies Bee Hives.

Blackwater Honey is a family-run beehive business that also intertwines the importance of biodiversity into its farming method. Today our Oinkies bees produce the delicious honey used in our marinades and more in our pork on the spit. At Oinkies we are committed to the importance of maintaining the bee population and increasing the number of native bees in Ireland to produce honey.

Oinkies wants to promote bee farming so that these fantastic insects can perform their pollination tasks, which supports the ecosystems in Ireland. Our efforts at Oinkies help grow fruits and vegetables and use sustainable in-house ingredients to produce delicious catering options for our clientele.
